Plantation House tasting menu

Voted one of Hawaii’s “Rising Star Chefs,” Jojo Vasquez presents his five-course tasting menu of locally sourced and inspired seasonal bounty with fine wines during dinner nightly at Plantation House restaurant in Kapalua.

With a culinary background that includes The Ritz-Carlton Kapalua and Morimoto Waikiki, Vasquez is classically trained and likes to use influences from his multicultural heritage.

The tasting menu features steamed red crab with chive creme fraiche; Maui farmer’s salad; Hawaiian fresh catch with Kula corn compote, crispy spinach and pickled beets;; prime flatiron steak with sauce Bordelaise; and PB & J peanut-butter-parfait of the gourmet kind. Cost is $90 per person and $158 with wine pairings.

Today for Thanksgiving, Vasquez will feature a carving station with turkey and all of the fixings such as potatoes and gravy, green beans, stuffing, glazed yams and cranberries for $39. Or opt for brown-sugar glazed ham or other a la carte items.
