Field to plate growing interest at Nobu Lanai
Nobu Lanai restaurant, located at the Four Seasons Resort Lanai at Manele Bay, offers fresh flavors on its unique and innovative menu – fresh from its own farm, that is.
The half-acre Nobu Garden is home to a variety of herbs and vegetables, including baby lettuce, squash, tomatoes, scallions, watermelon radish, asparagus, red beets, carrots, green beans and cilantro.
Ingredients particularly relevant to the menu at Nobu include daikon, Japanese eggplant, edamame, shishito peppers, cucumber flowers and sesame. The produce is harvested daily to ensure freshness for the evening’s diners.
Dishes, such as the lobster salad with spicy lemon dressing and the big-eye ahi tuna sashimi salad with Matsuhisa dressing, incorporate 100 percent of what is grown there.
