Patz & Hall to be uncorked
Famous Sonoma wines will pair with Ferraro feast
The Patz & Hall Winery dinner will be uncorked at 7:30 p.m. Friday at Ferraro’s Bar e Ristorante at the Four Seasons Resort Maui at Wailea.

Ferraro’s Chef de Cuisine Justin Purpura has created a special five-course menu that begins with foie gras mousse with mango and strawberry and Hawaiian chili dust on toast points and Dutton Ranch Russian River Valley 2015 chardonnay.
The second course is charred octopus with spiced pineapple, sauce Romesco and lime aioli paired with Zio Tony Ranch Russian River Valley 2009 chardonnay.
For the third course, savor corn agnolotti with winter truffles, Hawaiian abalone, chives and beurre monte and sip Sonoma Coast 2014 pinot noir.
The entree course will be grilled lamb chops accompanied by broccoli rabe ladled with a tomato, garlic and port sauce paired with Gap’s Crown Vineyard Sonoma Coast 2008 pinot noir.
The dessert by Pastry Chef Bruce Trouyet and team is brandied cherry and Grand Cru dark-chocolate entremet, meaning small dish or dessert, served with a cherry cloud and black-currant sorbet and a bold wine pairing of Secret Door Winery Napa Valley 2014 cabernet sauvignon.
