Chefs share expertise at collaboration dinner

FIRST PHOTO: Calgary chefs John Jackson and Connie DeSousa cut the strings they used to truss their cured pork loin roasts stuffed with pig heart pork sausage Thursday evening after taking them out of the oven at the University of Hawaii Maui College’s culinary arts center during the Maui County Ag Festival’s Grown on Maui Chefs’ Collaboration Dinner. DeSousa and Jackson are part of a Canadian contingent taking part in today’s Ag Festival at the Maui Tropical Plantation in Waikapu.

SECOND PHOTO: Award-winning chef Sheldon Simeon (right) sauces his kampachi entree Thursday. The annual event celebrating island farmers, ranchers, chefs, gardeners and all the tasty items they produce runs from 9 a.m. to 4 p.m. Admission is $3 for adults, under 21 free. Parking also is free, and there is a free shuttle leaving every 15 minutes from the Baldwin High School parking lot.
