
| | Chef's on the Beach a successApril 25, 2011 - Carla TracyThe Rotary Club of Maui’s signature fund raiser, Chefs on the Beach, was a big hit with participants last Saturday. It was held in Makena at the private oceanfront estate of Joseph Sugarman. A number of top Maui restaurants donated their time and energy and music by Fulton Tashombe, Phil and Angela Benoit and the Hawaiian Serenaders filled the air. “Makena Beach & Golf Resort’s Executive Chef Marc McDowell had a laugh while preparing the tempura the special sushi creation for the event as you can see in the pictures, at right. McDowell’s culinary team from the resort’s Raku Japanese Restaurant, formerly the Hakone Restaurant, served Eel on the Beach, a specially made sushi roll for the event, which consisted of a California roll topped with unagi tempura, unagi sauce, tabiko and shredded egg.
“At Raku, we are always thinking of new innovative dishes and we wanted to bring something extra-special for this fundraising event, this roll was something we have been wanting to try out in Raku for a while now and based on the great feedback we received may introduce it as a sushi special at the restaurant,” says Raku’s Chef de Partie Tom Kamijo.
