Gerard's teams with local farm to make gourmet pork from pigs raised on Maui
January 17, 2012 - Carla Tracy
Gerard’s at the Plantation Inn in Lahaina has been pleasing diners for almost three decades with its gourmet French cuisine with an island twist.
Now, chef-owner Gerard Reversade has teamed with Lehua and David from Malama Farm in Peahi, Maui, buying their whole Berkshire pigs. For the holidays, Gerard featured the following items on his special menu: Pork Confit, Braised Ham, Head Cheese, and his famous Rillettes. He will purchase another pig and will feature the pork on his Valentine Day menu. In addition to the items mentioned, he will also offer a “Charcuterie Plate.”
Do come to Gerard’s on or around Valentine’s Day and savor the pork rilletes with crusty bread and French cornichons (pickles).
And, look for a feature story in The Maui News soon about the teaming of these two superior enterprises. For more information, visit Malama Farm’s Website; or visit Gerard’s Website; or call Gerard’s at 661-8939.
