Raw Bar continues to make a splash at Four Seasons Resort Maui

If I had to choose my top pick on Maui for indulging in seafood, it would be the Raw Bar served at the Four Seasons Resort Maui’s DUO Steak and Seafood restaurant.

All I can say is, “it’s rawsome!” If you are like me, and love to pound fresh oysters on the half shell, and savor lobster tails, choose the Raw Bar’s Endless Catch, the best option for seafood lovers on the island. You may also order items such as scallops Peruvian from the Raw Bar a la carte as an appetizer before your meal.

All the rage with diners, it’s set up in sleek aquamarine glass boxes Thursdays, Fridays and Saturday nights and packed with the above-mentioned seafood along with pokes, prawns, and crab claws — all glistening on ice.

Squeeze a fresh lemon on the succulent lobster chunks and dip them in a creamy brandy aioli. Or be dazzled with mahimahi ceviche.

Right now, five different types of fresh oysters on the half shell are making a splash and friendly and fun Raw Bartenders will shuck them to order.

“Right now, we have Shugoku oysters, very nice oysters delivered in sturdy boxes. We also have Kusshi, Kumamoto, Belon and Fanny Bay varieties,” says Executive Chef Roger Stettler. “Other than that, we change the Raw Bar menu quite often. I don’t think there’s anything like it. We change it every week to entice guests and keep them coming back.”

Sauces are gourmet to the max. You may top your oysters with traditional mignonette or tart green-apple mignonette. You'll also find kim-chee aioli, ponzu-and-lime sauce, and Tabasco lemon. The brandy aioli is out of this world.

Since this is the Four Seasons, of course, there is no "wall of shame" for people who eat too much. Stettler says there have been a couple of guys who have pounded dozens, but that is rare.

"The record for oysters eaten by one person was 48," says Raw Bartender Mike Termini, who was featured on the "Hell's Kitchen" TV show. "We also had several gentlemen who were able to pound down 36 oysters each.”
