"We want to help our health-conscious guests easily locate the most healthful menu options at Maui Tacos," says Jeff Endervelt, chairman, president and chief executive officer of Maui Tacos International, Inc., who bought the Hawaii part of the business from Chef-founder Mark Ellman.
