Pizza Paradiso in Honokowai Marketplace (housing Times Super Market) has added Mediterranean Grill to its name.
"Whenever I have parties at home, people just go crazy over the food," says Chef-owner Paris Nabavi. "So I'm going back to my roots. I do a slow-cooked stew called tagine, I make tabouli from scratch as well as falafels like the Egyptians and the Lebanese do with dried chickpeas and cumin."
Nabavi is also wowing his customers at the walk-up counter with lamb gyros served on flat bread, hummus, dolmas and occasionally, kebabs. He only uses Maui Cattle Co. beef, and he buys Upcountry lamb from them. In addition, almost 90 percent of his vegetables come from Maui.
Paris Nabavi is going back to his Persian roots by adding gyros, hummus and kebabs at his popular pizza stop.

"This is my country now, and I will do anything to support it," says Nabavi, who also owns Cilantro Mexican Grill in Lahaina. Some of you may know him as the former food and beverage director of Kapalua Bay Hotel.
"I lived all over the world and worked for Hyatt, Fairmont and Westin and burned out on corporate life. Now, I'm hands-on in the kitchen, making pizzas and sauces and tiramisu from scratch. I'm still a foodie and do catering, too."
Of course, the $6 spaghetti lunch is still onboard daily from 10 a.m. to 4 p.m., featuring Bolognese sauce with Angus beef and crusty garlic bread. Pizzas are served whole and by the slice. For more details, call 667-2929.
