‘Eat A Rainbow’ cooking offered

WAILUKU - Chef Joe Wilkinson will put on his "Eat A Rainbow" healthy cooking demonstration at Simply Healthy Cafe on March 2 from 9 to 10:30 a.m.

The free demonstration/class is presented by Hui No Ke Ola Pono with support of the American Cancer Society and Maui Memorial Medical Center in recognition of Nutrition Month and Colorectal Cancer Awareness Month in March.

The chef will prepare a salad with low-fat lilikoi vinagarette dressing, vegetable Napoleon and a low-fat chocolate-banana cream pie. Participants will learn how to use local fruits and vegetables for a tasty and healthier meal while learning about nutrition, dietary guidelines and healthier choices.

Lisa Allen, registered dietitian at Maui Memorial, will provide a dietary analysis of the chef's menu and answer questions.

Colorectal Cancer Awareness Month in March promotes high-fiber and low-fat diets with less red meat, important guidelines to reducing the risk factors for colorectal cancer. In addition, people should get 150 minutes of moderate physical activity per week for adults and an hour a day for children and adolescents.

The "Eat A Rainbow" campaign promotes eating a colorful selection of fruits and vegetables. The American Cancer Society's 2012 guidelines promote eating at least 2 cups of vegetables and fruits daily, as well as choosing whole grains over refined grain products.

Seating is limited to 25 participants.
