Starting Wednesday, winemaker and beer dinners will start to flow at The Ritz-Carlton, Kapalua and other resort restaurants in the vicinity.
First up will be a four-course feast featuring the wines of Fantesca Winery of Napa Valley at the Ritz's signature Banyan Tree. Heidi Peterson Barrett has been making the wines for owners Duane and Susan Hoff since 2008 and the results are incredible.
Savor crispy chicken and taro waffle with rosemary maple syrup; pan-seared scallops with orange gastrique and vanilla creme; lamb loin en sous vide with roasted eggplant, soy-glazed shisito peppers; and dessert of summer berries with vanilla yogurt.
