Each and every morning, he preps all of his own sauces and simmers Malama Farm pork in red wine with polenta; makes duck confit with white beans and brussels sprouts, and whips up Hawaiian snapper with orange-ginger sauce, and serves it with fennel fondue and potato-carrot puree.
Hawaiian country filet of beef with whole-grain mustard sauce, warm Maui-onion jam and salsify au gratin would be perfect on Father's Day, too, as would the pate and the rillettes.
