Some local restaurants work hard to adapt to takeout (Take-out list updated Monday)

They scratch out revenues in scary virus environment

A handful of local restaurants are still open to the community -- but takeout only with adjusted hours and menus -- to mitigate the financial losses caused by coronavirus emergency orders.

Moonstar Greene, the owner of Nuka and Paia Fish Markets, said that the transition to takeout "has been challenging, but we continue to do our best to serve our amazing community."

Greene said Tuesday in an email that it's too early to determine whether takeout will be financially viable for the restaurants, but remains optimistic about keeping the doors open at her businesses on the north shore and in South Maui.

"We have good days where it seems like things are getting better and then some bad days where it's hardly worth being open," she said. 

Choice Health Bar, which has three locations on the island, has daily sales between 20 to 40 percent of what the eatery usually makes since the outbreak. The Kaanapali location was closed along with Whalers Village. 

"As you'd expect, our sales are down significantly in Lahaina and Paia, however, our local clientele are really coming out to support us, and each day we do a little better," co-owner Emily Kunz said. "This said, we see the same local customers coming back and are thrilled that our regulars are supporting us, sometimes daily, to help keep the business going.

"We feel a momentum building and are hopeful that this continues."

Because Choice was utilizing a takeout model before Mayor Michael Victorino ordered the shutdown of dining-in establishments, Kunz said that the transition has been relatively smooth, though the business has cut down to a rotation of 25 employees from about 65 to maintain social distancing and financial stability.

About 75 takeout orders are being made daily in each location. Kunz said her business also has initiated a curbside pickup, a Healthy Value Menu "with some of our most popular menu items priced significantly lower," and starting next week, free delivery service.

"We'd love to provide our community with inexpensive healthy meals that are filling and nutritious," she said.

Choice also has partnered with Maui Food Hub to be the west side distributor for its online virtual farmers market program.

On the west side, Moku Roots at Lahaina Gateway is open daily 10:30 a.m. to 3 p.m. and is offering delivery Tuesdays and Saturdays for Upcountry, Wednesdays for Kihei and Wailea, and Fridays for West Maui through 808 PickUps.

On its Instagram on Monday, the restaurant posted that "we have local produce boxes, full menu, lots of awesome bulk goods, including zero-waste olive oil, local mac nuts, chia seeds, hemp seeds, granola and more and grab-and-go items."
