Nachos with a twist
Kapena Grindz food truck owner Kapena Kaopuiki adds a dash of chopped green onions to top off an order of “fresh ahi poke bowl nachos” Tuesday afternoon in Maalaea. Kaopuiki describes his food as “contemporary local” and credits influences from his grandmother, as well as Maui restauranteurs and chefs Joey Macadangdang, Jesse Sidney and Travis Takahashi. “They really left a big impact on who I am today,” he said. “The food and beverage scene opened up a lot of doors for me. It keeps me going.” Kapena Grindz is located in the parking lot adjacent to the Maui Golf & Sports Park. It is open Monday, Tuesday and Friday, noon-6 p.m. and Saturday-Sunday, 10:30 a.m.-3:30 p.m.
