Nobu opens Maui restaurant at Grand Wailea

The world-renowned Nobu restaurant brand has opened its first location on Maui at Grand Wailea, A Waldorf Astoria Resort, following the completion of a $350 million resort-wide renovation.
Nobu Grand Wailea Maui marks the second Hawaii location for the global brand founded by Chef Nobu Matsuhisa, actor Robert De Niro and producer Meir Teper.
The 13,000-square-foot restaurant features indoor and outdoor dining, a sushi bar and a private dining room — all designed by acclaimed architecture and design firm Rockwell Group.
Known for its fusion of traditional Japanese cuisine with South American influences, the menu includes Nobu’s signature dishes such as black cod with miso, yellowtail jalapeno, rock shrimp tempura and a wide selection of sushi.
The Maui location will also offer exclusive dishes using local ingredients including desserts like the Kona Coffee-infused tres leches cake and a pavlova made with Oahu’s Laie Vanilla and blood orange sorbet.
“At Nobu, inventive cuisine and unparalleled service are at the heart of everything we do,” Chef Nobu Matsuhisa said in a news release. “We are thrilled to introduce Nobu’s signature style to Maui alongside dessert items exclusive to the resort.”

Guests enter the restaurant via a grand imperial staircase that descends from the resort’s open-air lobby. The main dining area features 35-foot ceilings and an indigo linen installation suspended above the room to mimic the motion of ocean waves. The open-air venue is cooled naturally by ocean breezes.
The design incorporates natural materials such as black cerused wood, white onyx and lacquered walnut burl. Hawaii-raised artist Windy Chien created a custom-knotted rope installation for the clerestory windows.
Executive Chef Kyle Marston, a decadelong veteran of Nobu, is leading the new Maui kitchen.
He previously served as executive chef at Matsuhisa Denver and head chef at Nobu Old Park Lane in London. Marston is joined by head sushi chef Bora Oh, formerly of Nobu Malibu.
“This partnership elevates the resort to new heights, offering an extraordinary world-class destination for impeccable food and service,” said JP Oliver, area managing director of Grand Wailea.
Nobu Grand Wailea Maui is open for dinner service from 5-10 p.m. daily.
