Speaking of indulgent, Wailea Wine is offering 2006 Louis Roederer Cristal Champagne to pop open for New Year’s for less than $200 a bottle. “The palate offers a finely layered mesh of blackberry, poached pear, almond pastry and lemon zest,” says owner Ed Mikesh.

Four Seasons Resort Maui in Wailea is opening dining reservations to outside guests 24 hours in advance through the holidays. So that means you may now book Christmas Day feasts there.

DUO will offer an all-you-can-eat buffet from 4:30 to 9 p.m. with a seafood market of poached and chilled lobster tails, prawns, king and snow crab, fresh shucked oysters with all manner of sauces. Other highlights are prime rib, Kurobuta ham and whole baked island catch and lavish desserts.

Ferraro’s Bar e Ristorante will present Christmas Day specials of five-spice pork belly with beer sorbet; and butternut squash tortelli. Call 874-8000.

Sashimi is not only an island staple, it’s a tradition over the holidays, especially for New Year’s Day. Order ahead for sashimi platters at Takamiya Market, the little giant of Happy Valley. While closed on Christmas Day and on Sundays, it’s open from 5:15 a.m. to 6 p.m. other days. Also available are sliced Farmer John ham, sushi platters and ahi and tako poke.

They savored the salmon salad with toro (which owner and “Iron Chef” Masaharu Morimoto cooked for them at the State Dinner at the White House); wagyu ribeye; and peanut-butter bombe dessert. There’s a Morimoto Maui at the Andaz Maui in Wailea and it’s open daily for lunch and dinner serving the same presidential-quality dishes.
